I have a great substitution for the soft scrub. I have a tiled shower, so I have to use something that well, if I am going to to get it clean. Vinegar and water is an excellent way to clean floors and surfaces. 2/3 Vinegar mixed with 1/3 dish soap is awesome, too. It works just an all-purpose cleaner. (http://en.wikipedia.org/wiki/Vinegar#Cleaning_uses) Borax is awesome in the laundry room; I have been testing out different recipes; I will post a recipe for homemade laundry detergent, later. The best thing about all of it is the cost is less for the less chemicals and working just as well.

The mixture is easy!
1 cup baking soda
1/2 cup of dish soap
Optional: 1/3 cup bleach

This season truly was weird: it rained for what is seem like the whole month of May and then in June it just quit raining. And trend did not change in July and August; a true lack of rain. My tomato plants are tall and beautiful; my garden looks more like a tomato forest. Please note the picture below.

But I have to say, overall I am really pleased with my garden this season. I have most everything I would use out there right now. I definitely still have some learning do in the process. Next years, I will have some major changes.

Oh, the salsa has been made, I need to make some more. Anticipation of the salsa, is the highlight for my daughter. I will say 'hey look at the little tomatoes' and she looks at me and says: 'Mmmm, salsa'. And that is really the only thing that she wants from the garden. I hopefully will be making more of salsa and then some marinara.

I just got some dill, I am so ready for some dill dip with roasted pepper and some Hawaiian bread. I am getting hungry just thinking about it.
I have been on the Atkins diet for over six weeks and have had some success so far. I have to tell it is not a diet for the meek. Willpower is key. Giving up sugar and other carbohydrates is challenging. Sure there are perks, like bacon. But overall, it is a difficult diet to follow and if you not follow it exactly, you may end up gaining. I have a recipe that you can try if you are on the Atkins diet or not. It is a yummy appetizer.

The amount really depends on how much you plan on making. First, take the salami lay on flat surface, place salmon next, spread out 1 teaspoon cream cheese on top of the salmon. Add two of the roasted red peppers and roll up. You can make as many as you like; they are an awesome snack.
I like making them too, because I get to use leftover items in my pantry. (For example: the almost gone dried cranberries, the remaining cup of chocolate chips or the left over Rice Krispies.) One of my friends has a great saying, it's the "back of the refrigerator special". Well this is similar, but the "back of the pantry special".

Recipe:

Base: this is what you need to have it stick together

3 teaspoon of cooking oil

2 cups of marshmallows (the small ones will melt quicker)

½ cup of peanut butter (chucky or smooth)

3 cups of oats

Ideas for Bars:

1/3 cup of Chocolate chips

1/3 cup of dried cranberries

1/3 cup of raisins

1/3 cup of Peanuts, cashews or almonds
1/3 cup of Rice Krispies

Preheat oven to 350°. Have a cookie sheet, with aluminum foil, sprayed with cooking spray ready to go. First, heat the oil in a medium sized pan over medium heat. Add the peanut butter and the marshmallows. Once the mixture has melted, slowly start adding the oats.
Once all the oats have been added, you can pour in the nuts and berries (do not add the chocolate chips yet). After everything is combined (minus the chocolate chips), remove from heat & pour mixture onto cookie sheet. Smooth the mixture out across the cookie sheet to about 1/4"-3/8" thick (I use the back of a greased wooden spoon). Now sprinkle on the chocolate chips & "push" then down into the mixture a little with the spoon. Bake in the oven for 10 minutes. Remove & cool for 10 minutes, then make some space in the frig, put down a few pot-holders & finish cooling in the frig for 1-2 hours. If you used a Stone cookie sheet just slide the granola & foil off onto the pot-holders. Remove from frig, break granola into bite sized chucks. Store in closed container or Zip-lock bags. Enjoy!
Lightly coat a 9-inch spring form pan with cooking spray. Using a food processor, grind the cookies with 1/4 cup sugar. Add the butter and pulse to combine. Press the mixture into the bottom and halfway up the sides of the prepared pan. Bake until firm, 3 minutes. Transfer to a rack to cool.

You will have two mixtures: a pumpkin (orange) and a white mixture. Using an electric mixer, beat the cream cheese and remaining 1-1/2 cups sugar until smooth, about 1 minute. Beat in 2 eggs until blended. Transfer 1/4 cup of the cream cheese mixture to a small bowl and set aside. for your orange mixture, add the remaining 3 eggs, the pumpkin, vanilla, pumpkin-pie spice and salt and beat until combined, 2 minutes.

Set the spring form pan with the cooled crust on a double layer of heavy-duty foil and wrap the foil tightly around the bottom and sides; set in a roasting pan. Make sure that no water can get in. Pour the (orange) cheesecake filling into the crust. Then, dollop the reserved (white) cream cheese mixture onto the filling and, using the tip of a knife, swirl together. If you would like add chopped hazelnuts to the outside edge, Transfer the roasting pan to the oven and fill with enough boiling water to reach about halfway up the sides of the spring form pan. Bake the cheesecake until the center is slightly wobbly but the edges are firm to the touch, about 1-1/4 hours.

Transfer the roasting pan with the cheesecake to a rack and let cool for 45 minutes. Since the gift has come to my house my children have devoured some chocolate chip muffin tops. I did make some blueberry muffin tops, I enjoyed them, however the boys did not so much. So, below is the recipe, you can substitute the chocolate chips with blueberries if you like.

Recipe:

Dry Ingredients

1 3/4 cup of all purpose flour

1/2 cup of brown sugar

2 teaspoons of baking soda

1/2 teaspoon of salt

Wet Ingredients

1 cup of milk

1/3 cup of applesauce

1 egg

3/4 cup of chocolate chips

Preheat oven at 350 degrees. First, mix your dry ingredients in one bowl. Then mix the wet ingredients in another bowl. Mix the wet and dry together until mixture are well combined, add the chocolate chips. Spoon out the batter into each of the muffin top saucers, fill in up to the top.
Bake at 350 for 22 minutes. Place on cooling rack and let cool. Yield 12 muffin tops.
It is a great cut of meat. At the grocery, you can get those pre-seasoned pork tenderloin; and they are good. However, they are filled with crazy amounts sodium and preservatives. I usually buy the pork tenderloin with no season and I cook it in the crock pot with vegetables and potatoes. So, I have wanted to try something different lately with the pork tenderloin and here it what I have come up with…..

Everyone at my house loves chocolate chip cookies and to me, handmade chocolate chip cookies are the best. I got this recipe from one of my favorite food blogs: Smitten Kitchen. The recipe was named: Crispy Chewy Chocolate Chip Cookies; needless to say I was already excited.

Not sure if I would have called these cookies chewy or crispy. They were definitely awesome and definitely gone quick!Katehttp://www.blogger.com/profile/04087372015311218653noreply@blogger.com1tag:blogger.com,1999:blog-7886467272125688298.post-26083254752334772352011-06-25T13:41:00.000-07:002011-07-12T09:14:12.629-07:00Sunday Morning Pancakes

My kiddos love pancakes. Every Saturday or Sunday morning we have pancakes; it makes the weekend even more special. From scratch pancakes aren't hard to make and you can have them ready in a flash. The pancakes below are easy to make and I modify them with chocolate chips, cinnamon, or fresh blueberries: just depends on what you are in the mood for that morning.

Adapted From: Better Home and Garden: New Cook Book

Recipe:

Dry Ingredients

1 1/2 cup of all purpose flour

1/3 cup of brown sugar (or white sugar)

2 teaspoons of baking soda

1/2 teaspoon of salt

Wet Ingredients

1 cup of milk

1/3 cup of applesauce (or 2 tablespoons of oil)

1 egg

1/2 teaspoon Cinnamon (optional)

First, mix your dry ingredients in one bowl. Then mix the wet ingredients in another bowl. After both mixtures are well combined; add in the cinnamon if you would like. Get your skillet and put you burner on medium heat. Wait until the skillet is hot before putting the cooking spray on the skillet. I test by putting a drop of water on the skillet; if it sizzles, it is ready. Once, you have the cooking spray on the skillet start putting the pancake batter in the skillet. I use a 1/4 cup measuring cup to dish out the batter into medium sized pancakes. Let the batter cook until bubbles appear on the upside; then flip. Cook for another two minutes or three and then the pancake should be ready to go. This recipe will make around 12 medium pancakes. Enjoy!

Blend these ingredients together in a food processor or blender. (I recommend a blender). From there you have some choices. You can just have drink the mixture, it is yummy. However, you could introduce yourself to a new cocktail by adding some vodka. I decided for some Popsicles; they were awesome. A very refreshing treat on a hot summer afternoon.
I want the best for my children. Healthy snacks kinda a challenge. But one snack that I know is always a hit with my kids is popcorn. Recently, it has come out in the news that the additive in microwave popcorn butter in prolonged exposure can cause lung cancer. I know that second hand smoke can cause cancer, too. I will not let someone puff a cigarette in my kid's face; so why the heck would I constantly and knowingly expose my kids to to another carcinogenic substance. I have provided some links for you to decide for yourself. In addition, I will provide you with a popcorn recipe. I like some popcorn. My son loves popcorn, or pop-pop as he calls it.

Big Pot with lid.

To begin, you will need a 4 quart pot or bigger you will need a lid. You can use a smaller pot, but you will want to use less popcorn kernels. First add the oil and urn on the burner to medium high. Let the oil heat for 2 - 3 minutes. Then add the popcorn and the garlic salt and the Cajun seasoning.

After that, place the lid on the pot. Please note that the popcorn kerenls will be hot and will pop up. So, proceed with care!! Keep the temperture medium high; you will need a oven mit and and hold down the lid on the pot while you shake the popcorn around the pot. It should take a couple of minutes before the popcorn starts to pop. You do not have to continuous shake the pot; but you don't want the kernels to burn, so keep them moving around.

Once, the popcorn starts popping most of the kernels will follow. Just like microwave popcorn, you listen for when the pops get longer apart and when turn off the heat. Continue to wait after that; because stray kernels will pop. This recipe is just a general description of making popcorn on the stove top, and it may take you a couple of times to get it exactly the way you want it. Sometimes, I use cracked pepper instead of Cajun seasoning. It is up to you on what you like: you may want just salt or just Cajun seasoning.
I live in the city, I have a small yard. So, I believe that I have done the best with what I have to work with. The image below is my triangle garden. In this patch, I have my greens planted, spinach, romaine and chard. I always try to plant something that I have grown before, Swiss Chard was was it this year.

Next, my herb garden on the hill. A tiered garden fixed-up by my wonderful and obedient husband. He is awesome. Any how, I have some onions planted, mint, oregano, parsley, rosemary, rhubarb, chives and some hot banana peppers. I like this area lots, it just needs some more work, to make it more tidy....

Oh, this is my biggest raised bed garden, my vegetable garden. We love some salsa at my house!! Here I have some tomatoes, which are the bulk of my garden, sweet pepper plants, some cabbage, romaine, onions and at the end are some sugar snap peas (they have been currently replaced with green bush beans). You can see my herb garden in the distance.
So, I guess now that I have shared my garden I will need to submit some new pics soon, to show you my progress. I will provide with with some good ideas naturally to keep the bugs away. Basil, I have it planted in between many of tomato plants and marigolds at the ends of my garden. The cut worms destroyed my sweet pepper plants last year. I really hope that I can keep them away this year.Katehttp://www.blogger.com/profile/04087372015311218653noreply@blogger.com0tag:blogger.com,1999:blog-7886467272125688298.post-50810739489003023182011-06-15T14:40:00.000-07:002011-06-15T14:40:20.911-07:00Big Plans!Seize the day... which is the running joke at my house currently (from Megamind). But there is much to say said about that quote. I have been wanting to start my own blog for quite some time now. I want to share so much!! I love cooking, heck I love food, not just cooking. But that is not the only subject that I wish to share; my passion for gardening, my love of technology (gadgets, Photoshop, programming) and more things that interest me. I want to also share experiences that I have learned from by a parent in this crazy world.
In addition, my family is interested in this blogging thing, too; so I hope from time to time you will see posts from my husband, Kryss and my daughter Morgan. Kryss like me; loves the gadgets. If only, we made more money or someone would just give us products to test we would. Kryss also enjoys video games when he get to actually play with them. Morgan is a movie buff, and she is pretty sophisticated for a nine year old. With that, she can understand pretty complex plots and she realizes everything is part of the movie (aka not real). I think that she would make an excellent costume designer one day.Katehttp://www.blogger.com/profile/04087372015311218653noreply@blogger.com0
